Particular preference was given to round-shaped dishes - similar to the sun (and this, as you understand, is not only pancakes). Pie with berries and sour cream filling is an excellent dish for the Maslenitsa table - golden, like the sun, decorated with berries (rays), amazingly delicious. And the smell is of the coming spring and the coming fragrant summer.

Ingredients:

  • 2 large eggs (or three small);
  • 1 glass of sugar;
  • 1 glass of sour cream;
  • 0.5 cups vegetable oil;
  • 2 cups flour;
  • 2 teaspoons baking powder;
  • 1 packet of vanilla sugar;
  • 1 gram of salt;
  • 400-500 grams of berries (to taste);
  • 1 tablespoon starch.

Sour cream pie with frozen berries. Step by step recipe

  1. Beat eggs with sugar, salt and vanilla sugar.

  4. We cover a round mold (I took a diameter of 22 centimeters) with parchment paper, grease it and the sides of the mold with margarine.
  5. Place half of the filling dough and distribute. We spread more than half of the frozen berries (mixed with starch). Add the second half of the sour cream filling and distribute the remaining berries over its surface, slightly pressing them with your hands. You can use any berries: strawberries, raspberries, currants (even apples) - it’s winter now, so I used frozen ones. In summer - fresh.
  6. Bake in an oven preheated to 180-200 degrees. Approximate time - 40-50 minutes (everything is individual, depending on the characteristics of your oven). Check readiness with a toothpick (it should be dry).
  7. Sprinkle the finished sour cream pie with powdered sugar on top.

2 teaspoons starch
2 eggs

Cooking method:

Thaw the berries first.
Line the bottom of a springform pan (24 cm) with a circle of greased parchment butter, grease the sides of the mold with butter and sprinkle lightly with flour. Heat the oven to 180 degrees.

In a bowl, mix cottage cheese, milk, sugar and vegetable oil, mix flour with baking powder and sift on top of the cottage cheese, knead the dough, form it into a ball.

In another bowl, mix sour cream, sugar, starch, vanilla sugar and eggs until smooth.
Roll out the dough into a circle with a diameter larger than the mold, carefully transfer it into the mold using a rolling pin, and form a side.

Pour the cream on top, then carefully spread the berries evenly without juice (if they are too juicy, you can mix them with a pinch of flour or starch), making sure that the cream does not overflow the edge.

Bake the pie for 40-50 minutes until the cream thickens and slightly quivers in the middle (you can cover the pan with foil.).
Then let the cake cool in the pan for about 5 minutes, carefully remove the side of the pan, then pull the parchment and drag the cake onto a wire rack.

Let it cool completely, you can even put it in the refrigerator after it has cooled, this will thicken the cream more.
But when cutting, the middle may still remain a little runny.
